Milwaukee chef Adam Pawlak is expanding his Egg & Flour brand by opening a micro-pizzeria on the city’s east side.
E&F Pizzeria will be a vendor at Crossroads Collective, 2238 N. Farwell Ave., the food hall developed by New Land Enterprises LLP. The pizza business will take over the vacant vendor space next to Pawlak’s Egg & Flour Pasta Bar.
The food hall opened in December 2018. Egg & Flour opened its vendor space in May 2019.
Earlier this month, the food hall added a new vendor called Triciclo Peru Express, a second location for the empanada business by Amy Narr and Mario Diaz Herrera. Pawlak’s pizza business will begin sales within the next few weeks, according to a Monday news release.
Both vendor stands will open seven days a week.
“With our limited space in a food hall, we really maxed out our options at the pasta shop,” Pawlak said in the announcement. “When the space next to us became available, I really wanted to think of a creative way to expand Egg & Flour while bringing something fun and much needed for the food hall diners. Pizza just seems like (a) natural fit.”
In addition to his vendor space at the food hall, Pawlak also opened an Egg & Flour restaurant in Milwaukee’s Bay View neighborhood this year. Although not a staple on Egg & Flour’s menu, he has offered pizza at the Bay View location.
The E&F Pizzeria will serve three signature pizzas each day, along with a specialty that will rotate. Pizza slices will be one-quarter of each pie; customers can also order a full 16-inch pizza. The business also will offer salads, according to the release.
Pawlak said opening another food business during the Covid-19 pandemic can seem risky, but he sees “a need here for another approachable and desirable concept for our guests.”
